COVID-19 may have led to the cancellation of big summer season road trips, big family reunions, and other fun events, but that shouldn’t mean we have to miss out on all the delicious food we would have been eating.
You probably are going to be spending more time at home this summer (maybe more than you anticipated), so why not use this time to test your cooking skills?
We have compiled a list of five easy dishes that will help you feel more in tune with the summer season while you’re at home or having a social distance get together with a few friends.
Full disclosure, some of these recipes we’ve personally tried, and some, although we didn’t test ourselves, looked too delicious to leave out.

Tomato Basil Mozzarella Toasts
This is one of the recipes we have tried and it is absolutely incredible. This recipe is quite simple (there are only four ingredients) and it only takes about 10 minutes to make.

Frozen Chocolate Banana Peanut Butter Bites
This is another recipe we have tried and absolutely loved, although, we did not coat our bites in chocolate but my mouth is watering just thinking about it! Frozen chocolate banana peanut butter bites are easy to make (all the ingredients are right in the name) and they make for an excellent cool treat on a hot summer day.
Stuffed Peppers
Now, we haven’t personally tried cooking this recipe ourselves (yet) but generally speaking, stuffed peppers are unbelievably tasty and colourful! This specific recipe only takes about 30 minutes total (10 minutes of prep and 20 minutes of cooking).
Strawberry Mango Smoothie
Nothing screams summer more than fresh fruit and this smoothie is full of it! This smoothie is refreshing on a hot summer day and perfect for when you’re in need of a snack but don’t want anything too heavy.
Smoothies are a great way to stay cool in the summer!
Baked Parmesan Zucchini Fries
For someone who traditionally doesn’t like zucchini, this recipe looks unbelievable. The recipe does not include bread crumbs making it a little healthier than others, however, if you are planning to test this out the author has noted that the fries will not come out crispy – still delightful though!
